Description

Colour: crystalline with deep green glints. Nose: intense, with peach, apricot and gooseberry aromas. Palate: complex, rich, and fresh, with a quintessence of flavors, and surprising length. Food & wine pairing: it will match very well with fish, sushi, tapas, seafood and clams, asparagus, and goat cheese. This is also perfect on its own.

The Paul Mas range of varietal wines is produced from our vineyards on the Nicole estate in Montagnac, near Pezenas. In the rollinh hills of the Herauls Valley and just a few kilometres from the Mediterranean coast, this region within the Languedoc is ideal for the production of premium wines. each of our grape veriety offers dinstinctive character, with an unmistakeable Languedoc style.

Soil Type

Limestone and clay, sandy and marly soils.

Viticulture

We select grapes from our vineyards around Marseillette, Limoux, and Montagnac, 3 different places with different climatic patterns (cooler in Limoux and Marseillette, warmer in Montagnac), in order to reach a nice combination of aromas. Vines from 15 to 25 years. Soil type: Limestone and clay, sandy, and marly soils. Average yield: 64 hl/ha.

Vinification

Destemming. Each varietal is vinified separately. Pneumatic press; we keep the first juice. Fermentation at 16°C with selected yeasts. Vinification and aging on-lees for 2 months, in stainless steel vats. We make the final blending in January/February before bottling.
