Description
Colour: light garnet red with purple tints. Nose: complex with plum, raspberry and garrigue notes evolving towards soft spices aromas. Palate: fruity, rich and round. Smooth and well-balanced finishing on fresh licorice notes. Food & wine pairing: best served at 17°C, it will suit perfectly all white meat dishes, grilled meats, Spanish tapas, brochettes with aromatic herbs, soft and medium-strength cheeses. Cellaring: 2 to 3 years.

Soil: clay and Limestone with gravel, as well as some schist soils especially where the Carignan is grown. Age of the vineyard: 11 to 23 years old. Pruning: Cordon de Royat. Density of planting: 4400 plants/ha. Harvest: mechanical at night. Average yield: 40 hl/ha. Climate: Mediterranean.
Vinification
Careful selection of the best grapes after a mechanical harvest at night to avoid oxidation and preserve the maximum fruit expression. After destemming of the harvest, each grape variety is vinified separately. Fermentation at 25°C. 8 to 12 days skin contacts for the Carignan and Syrah, 10 to 18 days for the Grenache. We only use the free-run juice and the first press. This process is geared towards maximum fruit aromas and softness preservation. Blending is done in November. 60% of the blend is aged in stainless steel vats, 40% in French and American oak barrels for 5 months.
