Description
Balanced and poised, this has elegant fruit from 80-year-old vines, supported by creamy oak. Concentrated layers of flavour – dried apple, nuts and preserved lemon – give power and precision, and a nice, long finish.

Viticulture
Vines are grown using organic practices, receiving only copper-sulphate treatment. Rows are plowed annually to promote soil health. Training in Guyot and planted at 10,000 vines/ha. Yields are controlled through strict winter pruning, debudding and green harvesting if neccessary. Average vine age is 20 years old.
Vinification
The grapes are directly pressed as whole bunches. The juice is then left to ferment spontaneously in both stainless steel and 228 litre barrels.
