Viticulture

Vines are grown using organic practices, receiving only copper-sulphate treatment. Rows are plowed annually to promote soil health. Training in Guyot and planted at 10,000 vines/ha. Yields are controlled through strict winter pruning, debudding and green harvesting if neccessary. Average vine age is 20 years old.

Vinification

100% de-stemmed and undergoes a 5 day cold maceration prior to fermentation. The grapes are still foot-trodden twice a day to gently extract colour and flavour without any trace of astringency.

Maturation

Aged for 12 months in French oak casks.
