Plots location : localities names Amour de Dieu, Biousse and Hongrie in Saint Péray + municipality of Toulaud. Climate : continental, hot and dry Pruning : "Cordon de Royat" - Density : 8000 vines stocks/hectare - Average age of vines : 30 years old. Yield : 45 hl/ha
Vinification
full grapes pressing- Cold settling during 48h, No use of chemical inputs other than SO2. Fermentation in concrete tank and large barrels at a low temperature with indigenous yeasts for about 4 months. Winegrowing : 9 months on lees in large barrels and concrete tank. Fining with clay. Tangential filtration before bottling.
