Gran Passo Tinto 75cl 2018
Description
Made from four grapes harvested later than usual to achieve a greater ripeness and smoothness. It results in a deep and inky wine, with ripe plum and blackcurrant aromas. In the mouth it shows prune, fig and cherry fruit notes. Chocolate and liquorice flavours, given by ageing in oak barrique, dominate a long and smooth aftertaste. The wine was aged in French American oak barrique for six months. The Fermentation took place in stainless steel vats during 12 days with temperature control, not exceeding 28ºC. Organic fining agent based on inactivated yeast cells and gum arabic before bottling.

Vinification
A wine made from the grape varieties Touriga Franca, Tinta Roriz, Castelão and Syrah. Harvested later than usual to achieve a greater ripeness and smoothness.Pressing after total destemming. Fermentation in 26.500 litres vats, with programmable pumping over system and temperature control at 28. º C - 30. º C. Skin contact maceration and (submerged) cap for 28 days.
