Description
Elegant aromas of red apple, lemongrass and freshly baked bread together with hints of strawberry, citrus and quince on the palate. Crisp and fresh with lively acidity and fine persistent bubbles. Great as an apéritif or a perfect pairing to the British classic - fish and chips.

Fruit is sourced from vineyards across Kent, Sussex, Essex and Dorset. Cool fermentation takes place in stainless steel tanks followed by full malolactic fermentation. Maturation on fine lees in tank for six months before bottling and an average of 18 months further ageing on lees in bottle.
