Viticulture
The vines are trained on wires and worked organically using mainly sulphur to prevent oidium and a shot gun for the wild boar.
The soils are so poor that yields are naturally low and there is no irrigation.
Vinification
The grapes are picked by hand, destalked on arrival at the winery and cultured yeast is added. There is skin contact for 4 days only.
