The fruit parcels for the inaugural Houghton Heritage White are mainly sourced from our Northern vineyard, Moondah Brook in Gingin. Machine harvesting at night ensures the fruit is picked in optimal conditions to retain freshness and flavour. Gentle processing of fruit preceded cool fermentation in stainless steel tanks to ensure vibrancy and freshness is retained. At the completion of fermentation the Heritage White spent several months in contact with yeast lees developing the mouthfeel, complexity and weight of the wine.
Vinification
The pressing tank technique is tank press. The wine is then fermented in a stainless steel vessel at 15ᵒC. A cultured yeast was used. Cold stabilisation occurs at -3ᵒC for 3 days. Maturation occurs in a stainless steel tank.
