Vinification
Shiraz grapes are identified in the vineyards and the characters desirable are ripe and fleshy. Majority of the vines are contracted and a “Single Wire VSP”. Yeast strains are selected and cultured to support the true varietal characters of Shiraz. Wines are fermented in large stainless steel tanks. Ideally 6-7 days on skins and drained and pressed for Malolactic fermentation on premium oak staves and planks. The shiraz wines are then matured on oak planks for a further three months. A portion of the blend is placed into 2/3 year old barrels. Only shiraz base wines that are supple, Jammy with ripe tannins and integrated oak are selected for the final.
