Viticulture

Gobelet pruning "Echalat" - Age of vines : between 5 and 30 years old. Green harvest - Planting density : 9-10 000 pieds/ha. Yield : 30 hl/ha, partial destalking (up to 25% depending on the vintage)

Vinification

In stainless steel tanks with a submerged cap : temperature controlled, natural yeasts. Maceration time : 15 to 20 days. Oak influence : French oak (demi-muid : 500 L), 12 months of ageing, 20% on new oak.
