Viticulture
All vineyard practices are conducted with nature in mind, we farm organically, using biodynamic methods whenever possible or applicable. The age of thevines range from 40 (essentially le Croix de Bois) up to 80 years old.
Vinification
15 % fermented with whole bunches. Fermentation partly in wooden vats and stainless steel tanks. Ageing is part in tank, part oak demi-muids barrels.
