Our delightful range of wines are produced from selected grapes sourced from sun-drenched vinyards situated in the sweeping plains of South-East Australia, many of which were formed by the great Murray River Basin with its alluvial soils. Our talented wine growers and wine makers use their honed techniques developed over generations in order to get the best out of the fruit that is carefully harvested. This passion and experience help to create consistently great wines that deliver on taste and quality with every bottle.
Vinification
The grapes are typically harvested during the cooler evenings and night in order to help preserve the grapes. The grapes are crushed and the stems removed, and they then go through a cool ferment process with some lees stirring in order to extract the perfect balance of varietal flavour, colour and typical Chardonnay full mouth feel. Once this fermentation stage is complete we undergo a partial Malolactic fermentation stage in order to soften the naturally occurring lactic acids, together with some and clean oak maturation to complement the wines rich and vibrant peach and delicate vanilla character.
