Viticulture

Low yielding, young vineyards and a splash of Riesling to add some fruit lift to the Grigio

Drought, fire and flood, followed by plague. The 2020 vintage threw everything at us, fortunately the smoke did not reach the Riverina and impact the fruit. The drought again impacted us with a dry winter and early spring. Thus resulting in some restriction of growth and yield.

Vinification

To secure the desired colour tone the juice is hyper-oxidized prior to alcoholic fermentation. Part of it is fermented in 14, 15 and 17 years old French barrels whereas the rest is inoculated with a selected strain of yeast in controlled temperature stainless steel tanks. The wine is then kept on fine lees for 3 months to help intensify the flavours and add texture to the palate.
