Viticulture
The season started with regular rain during spring following a dry winter and with warm temperatures the vine growth was strong. Warmer temperatures during summer put a strain on the vines but with careful monitoring and irrigation we were to produce a slightly reduced crop and berry size which enabled good varietal flavour and concentration to be achieved.
Vinification
Fruit is harvested once balance of fruit ripeness, flavour and acid are achieved. Grapes are then destemmed and fermented for 8-9 days in our Potter fermenters, pressed off skins then the different regions are blended together to create a harmonious Shiraz blend
