Noble One Botrytis Semillon 2017
Description
Noble One is an award-winning and renowned Australian icon. It is made from sweet, concentrated, half-shrivelled Semillon grapes, resulting in a luscious wine with flavours of peach, citrus and vanilla, and a slightly nutty character.

Viticulture
These vineyards are clay/loam soils that hold the moisture from the irrigation. The humid weather and early morning fogs Riverina gets during Autumn cause the botrytis to prosper and infect the grapes allowing the wine to develop the wonderful flavours that Noble One displays. Semillon, being a thin skinned variety, is very susceptible to botrytis which makes it the ideal variety to produce sweet wine.
Vinification
The grapes are harvested by hand and then pressed, which is often a slow process as there is hardly any juice. The juice is clarified, tartaric acid added to adjust pH and then inoculated with a yeast that is able to convert the high sugar content to alcohol with minimal acetic acid production.
Maturation
Between 80-90% is matured in French oak barriques for 12 months with approximately 30% new oak in a temperature controlled room (15C) and the remainder is left in tank
