Vinification
Picked mid-February. After gentle handling and pressing, the juice is cold settled, then racked, taking some juice solids into the ferment. 30% of the liquid was transferred to barrel for barrel fermentation, 70% remained in the tank for tank fermentation. Post ferment, both tank & barrels were kept on yeast lees and stirred fortnightly for several months. The wine was matured in oak for 10 months, prior to being racked and blended. BARRELS: 37% new oak, 63% 1 & 2 year old. 100% 300L French Oak Barrels
