Description
The Chenin Blanc grape is often underrated in an era when the more assertive Sauvignon reigns supreme, but Chenin is on equal terms when it comes to its lively refreshing nature. Harvested from vineyards around some of the prettiest châteaux in France and kept in labyrinthine underground cellars until release, it is perfect with well-flavoured fish dishes.

Viticulture
planting 4500p/ha, vines 25 years old. The grapes are carefully selected and grown with minimal interference to ensure natural ripening.
Vinification
Alcoholic fermentation in stainless steel vats lasted for 7 days at 17°C. Stored in stainless steel tanks for about 2 months.
Maturation
Less than 2 months in stainless steel. No oak ageing.
