Description

Here we have a black-cherry coloured wine with very good depth and a deep robe. On the nose, you can find reminders of black fruit, a touch of highly balsamic liquorice, spicy notes (white pepper), subtle hints of toasted aromas, coffee and slightly mineral nuances. This combination of aromas makes the wine complex and elegant. A silky-smooth wine, where the tannin can be found, rich and meaty, revealing youthfulness. Very good acidity which makes this wine long and fresh. Full in body with a very long, open aftertaste. It can be paired with grilled red meat and grilled rock-dwelling fish.

Total ageing: 30 months in oak and 1-year bottle before release. First year we use new oak (different sorts of French oak depending on the varietal), second year and a half we use neutral-french-oak barrels (3 to 7 years old).
We want this wine to have its own personality, a wine with character, far away from conventional wine profiles, a wine which undoubtedly reflects the terroir.
