Viticulture
As our champagnes are only made from our own grapes, we have to look after and maintain the vineyard in very good conditions throughout the whole year. We do not use any chemical fertilizer. The leaves and the grapes are checked very often, twice a week during the season. We are also concerned by the nature surrounding our vineyards. We are now certified HVE which means High Value for the Environnement. Hand Harvested
Vinification
We have 2 presses 4000 kgs Coquard. One traditional from 1972 and the second from 2001, fully automatic, unique in the area. We ferment on site and do the malolactic fermentation for 100 % of our wines in small vats only. We separate each vineyard and each year in order to realise the most precise possible blend. 15 % goes in wood. We use local oak trees and we stop before it gets too obvious. Disgorgement is still done by hand with no ice. Traditional.
