Vinification

A selection of our best Sauvignon Blanc from our coolest terroirs, harvested in the end of the night. After skin maceration for 2-3 hours, grapes are pressed in Pneumatic press The alcoholic fermentation takes place between 17 and 18° to preserve aromas. The wine is left on its lees for between 2 and 4 months and then aged in the traditional way in stainless steel tanks.
