Description
Pommard Les Noizons is the Domaine's most powerful Pommard village. A classic wine of great aromatic complexity with marked tannins. On the palate, there are notes of leather, underwood and ripe blackcurrant. Ideal with game meat, mature cheeses and chocolate desserts.

Soil Type
Located at the top of a hillside, the soils are typical Pommard; shallow and stony limestone with clay and a good dose of iron.

Viticulture
Domaine Arcelain feature reasoned agriculture, with no herbicides or chemical fertilizers and with many traditional Burgundy methods still employed, including ploughing of the vines. The earth is tilled in the Spring to inhibit surface roots and to facilitate absorption and drainage. Michel Arcelain is a keen advocate of following environmentally friendly viticulture in his vineyards.
Vinification
Vinification at the Domaine is very much traditional, with the harvest totally destemmed. Cold maceration for 48 hours, minimum levels of sulphur, vinification in open wooden vats for 15 days with one pumping over and one punching per day, malolactic fermentation, the wine is then pulled off into stainless steel tanks. Michael Arcelain is one of the few Burgundian producers who still retains a portion of each harvest to allow it to age properly in his cellars. For this reason, he is able to present wines with up to 10 years bottle age, which is ideal for Burgundian Pinot Noir.
