Waitrose Champagne Brut NV 75cl
Description
90% Pinot Noir and Meunier with 10% Chardonnay. Grapes sourced from 25 - 30 crus where enlightened viticulture is employed. Classic Champagne pressing with very light pressure to preserve purity of juice, followed by a natural settling lasting 12 - 18 hours. 1st fermentation at 18°C for 7 - 10 days, followed by 100% inoculated malo. More than 20% of reserve wines from 2 - 3 years before. After a second racking, the wine was left to clarify over several months. 2nd fermentation took 4 weeks in bottle and the wine was then aged on lees in cellars.
