Waitrose Loved and Found - Caladoc 2021
Description
This unusual grape variety, a cross between Grenache and Malbec, or Cot (realized in 1958 in Montpellier) gives a wine of gleaming deep red purple. It is very expressive on the nose, with red and black fruit but also floral and spicy notes, with a few touches of exotic fruit after airing. The palate is both immensely powerful and supple, deliciously smooth and well-balanced. Fine tannins underpin a finish with notes of pomegranate, violet, cinnamon and blackcurrant. A little-known grape that will astonish as an aperitif or with bistronomy inspired cuisine.

Vinification
Traditional winemaking methods with total destemming but without crushing. Short, 10-minute pumping over sessions are conducted daily, with fermentation at a temperature of around 25°C. Total time in vat is three weeks. Malolactic fermentation is carried out on the clarified wine.
Maturation
The wine is aged in concrete vats.
