Viticulture
Jean-Jacques believes in relatively long cane winter pruning in order to space out the foliage followed by strict 'évasivage' in the spring to reduce yields.
Vinification
Fermented and aged in their temperature controlled cellar allowing greater precision in the vinification. Vinified and aged in oak barrels for about 10 month.
Maturation
Aged in barrel on fine lees to delevop further complexity and texture in the wine.
