This quality-conscious grower makes stylish, structured white Burgundy. Floral notes and exotic stone-fruit characters balance a lovely weight and texture with a thrillingly crisp, mineral finish.

Calcerous clay (high level of limestone).

Jean-Jacques believes in relatively long cane winter pruning in order to space out the foliage followed by strict 'évasivage' in the spring to reduce yields.

Fermented and aged in their temperature controlled cellar allowing greater precision in the vinification. Vinified and aged in oak barrels for about 10 month.

Aged in barrel on fine lees to delevop further complexity and texture in the wine.
