Viticulture
The choice was to make this a wine with a pure grape profile, without technological intervention. So the vines are cultivated without herbicides, but by tilling the soils and natural grassing over. The use of pesticides is very limited, and they use ploughing and cover crops.
Vinification
Keeping it as simple as possible, they hope to have the purest expression of Pinot Noir. Relatively long maceration in stainless steel vats of 12 to 15 days with ‘pigeage' (punching down the cap).
Maturation
Maturing occurs in oak casks for 12 months, with a maximum of 15% of new oak, to keep all the freshness and purity of the Pinot Noir.
