Description
Finally , a Cava with serious finesse. L'Atzar Cava Brut Reserva, is a small batch Cava produced , spend and maturated a minimum of 18 months prior to release to give its beautifully and lovely crispness and intensity. Delicate and fine bubbles with pure fresh flavours of crunchy apples and biscuit notes.
L’Atzar is Spanish for “random” the perfect excuse to drink these bubbles on a random occasion, produced for the young entrepreneur winemaker Jordi Masdeu.

Viticulture
Our approach to viticulture and winemaking base its pillars on being organic and use biodynamic farming , something were have been slowly implementing over the years, to make sure treat these wonderful terroirs with greatest respect. In this way our job is based on strengthening the region's viticulture heritage, by making our L'Atzar Cava exclusively and majority with Parellada and small percentage of Macabeo and Xarel.lo.
Vinification
The grapes are pressed in modern pneumatic presses that prevent oxidation and exert a light pressure to extract the noblest part of the must. Each wine is vinified separately in small tanks to obtain a customised blending. Picking the grapes at their optimum point of ripeness,customising the vinification process and closely monitoring the fermentation process enable us to produce the best Parellada,Macabeo and Xarel.lo wines.
Maturation
Second fermentation on a bottle "Methode Traditional" L'Atzar Cava Reserva has spent a minimum of 18 months in a bottle before its realise.
