THE GRAPES WERE HAND-PICKED DURING THE LATTER PART OF OCTOBER. THEY WERE BROUGHT INTO THE WINERY AND TIPPED STRAIGHT INTO OUR PRESS. THE RESULTING JUICE WAS FERMENTED UNDER TEMPERATURE CONTROLLED CONDITIONS, LEAVING A SMALL AMOUNT OF RESIDUAL SUGAR.

Soil Type

Noticeable here is the famous red South Devon soil. An iron rich, volcanic sandy loam soil that offers good drainage and restricted nutrients. Not too far beneath is a bed of shillet (shale on clay) pushed up by the volcanic tuffs you can see on the river trail. This unique soil composition plays a huge part in the final flavour outcome of our wines.
