Soil Type
Noticeable here is the famous red South Devon soil. An iron rich, volcanic sandy loam soil that offers good drainage and restricted nutrients. Not too far beneath is a bed of shillet (shale on clay) pushed up by the volcanic tuffs. This unique soil composition plays a huge part in the final flavour outcome of our wines.

Vinification
THE RED GRAPES WERE PICKED DURING THE LATTER PART OF OCTOBER. THEY WERE BROUGHT INTO THE WINERY CRUSHED AND DE-STEMMED BEFORE BEING PUT INTO A SPECIALIST TANK TO PARTIALLY FERMENT ON THEIR SKINS. AFTER 5 DAYS THE GRAPES ARE PRESSED TO EXTRACT THE WINE, BEFORE BEING TRANSFERRED INTO STAINLESS STEEL TANKS TO FINISH THE FERMENTATION.
