Cream is a sweet sherry obtained from Palomino and Pedro Ximenez grape varieties. Palomino grapes are pressed and must is fermented to obtain a white wine that is afterwards classified and fortified, then ageing process starts in the Bodegas in Jerez to obtain Olorosos Sherry; in the meantime Pedro Ximenez grapes are spread in the sunshine to obtain raisins that are pressed and partially fermented to maintain natural sugar in the process and fortified, then ageing process starts to obtain Pedro Ximenez Sherry. The superb and complex blend of both special wines (very old olorosos and pedro ximenez) is made after a long ageing process in oaks butts through Soleras and Criaderas unique system.
