Sauvignon Blanc develops great aromas on the thin, porous, limestone soils from the Pfalz.
Vinification
The grapes are pressed gently and the juice cold fermented with selected yeasts at 16-18°C in stainless steel tanks. No malolactic fermentation or oak.
Maturation
The wine is left on fine lees for 3-6 months to gain structure and complexity.
