Around 40 year old vines, planting density of 4000 vines per hectare, cane pruning.
Vinification
The grapes are destemmed and crushed before they are fermented at a controlled temperature of 27°C. The maturation process is carried out mostly in tanks but 20% of the blend undergoes fermentation and ageing with French oak staves to add complexity and roundness to the blend.
