Greystone Organic Sauvignon Blanc 2019
Description
This is a characterful, unique wine that’s made by a tiny, boutique wine estate in a slightly unusual way: 85% of the wine is fermented in French oak barrels. There’s an impressive balance of richness, texture and bright fruit flavours, and notes of spring flowers and guava are packed in a smooth and creamy texture. Fantastic with soft cheeses.

10 yrs vine age, all Loire clones (376 & 530) - which is unique in NZ, cane pruned with only 2 canes to limit yield, 3000 vines per ha
Vinification
Fresh juice was settled after a gentle pressing. All Greystone’s Sauvignon is fermented in old French oak barrels with wild yeast, taking six months to get through to dryness which provides layers and complexity. The wine was allowed to go through 50% malolactic fermentation before it was racked out of barrels for blending. Estate bottled without fining.
