The farm is, today, lead by Stefano Caruso, CEO of the Caruso & Minini and agronomist. Contrary to the majority of the Sicilian producers, our vineyards are situated in a hilly area benefiting from the salinity coming from the sea. This position allows to produce wines with a higher total acidity than on the plain or the coast, and to make wines with intense aromas and great minerality. The highest hills, dedicated to the cultivation of the whites varieties, reach an altitude of 400 meters above sea level, whereas the valley bottom is where the red varieties grow. Every single grapevine was planted following the best combination of exposure, soil and climate. The whole vineyard is lead in total absence of irrigation. The cultivated varieties are: Inzolia, Catarratto, Grecanico, Grillo, Zibibbo, Viognier as white grapes and Nero d’Avola, Perricone, Frappato, Nerello Mascalese, Cabernet Sauvignon, Syrah, Merlot as reds.
Vinification
soft pressing, followed by fermentation in stainless steel tank and short maturation in stainless steel tank to preserve maximum fruit character
