Description

This exquisite Oloroso from barrel 51 in the second row of cellar 7, was chosen for its powerful, oxidative complexity. The colour is a lustrous gold, the nose a heady delight of caramel, marmalade, apricot and spiced orange. Bone dry but with delightful intimations of sweet pastry, great acidity and exceedingly long. Perfect with a cheese board accompanied by dried fruits and quince jelly.

Viticulture

Unirrigated vines are planted at a density of 3,500 to 4,000 vines per hectare and give yields of about 80 hectolitres per hectare.

Vinification

Fermentation is carried out in barrel, as has always been the case for the vintage wines of Gonzalez Byass. Temperature is controlled for about two weeks, the first week being tumultuous fermentation and the second being a slow fermentation.

Maturation

Breaking the tradition of blended solera wines, this wonderful Vintage Sherry is aged in stasis under a thick layer of flor in American oak casks until bottled.
