Pouilly-Fumé Les Clos du Matin 2021
Description
Clean and bright with greenish tinges. The nose exhibits pronounced aromas of white flowers and citrus fruits especially grapefuit. Rich and fresh on the palate combining power and minerality with great length. This is a perfectly balanced Pouilly showing finesse with the textbook gunflint characters of the appellation.

Viticulture
Harvested in September 2020 with yields of approximately 55hl/ha. Vines grown predominantly on chalky soils with some Marnes and Silex plots. Not satisfied with 'just' improving things in the winery, Christophe has recently been concentrating on the vineyards, aiming to precisely identify soil-types so as to better vinify the appellation’s main terroirs.
Vinification
After a cold settling, the juice is then fermented by terroir (and in some cases by domaine), with wines from sand, chalk, marne and flint being vinified separately.
Maturation
In temperature-controlled stainless steel tanks.
