Viticulture
Vines are hand pruned in winter. Followed by shoot positioning into a Vertical Shoot Position (VSP) in spring to allow dappled light into the fruit zone. Minimal sprays are used to help prevent fungal diseases. Once optimum ripeness is achieved the fruit is machine harvested during the cool night
Vinification
Crushed and pressed to stainless steel, careful addition of selected yeasts strains, 10 day cool-temperature ferment, chilled at end of ferment and held on lees for 1 month. Fined and filtered to retain crisp aromatic flavour.
