The grapes used to make Codorníu Rosé come from vineyards selected by our vineyard technicians and oenology teams in the Penedés region, where these varietals attain their full typicity. Our wine growing team works all year round in order to constantly improve crops, monitor ripening, decide on the best moments for harvesting and make sure that the grapes enter our winery in optimum condition.
Vinification
We begin by planning the optimum moment for harvesting the red varietals, seeking a good level of colour as well as considerable acidity and a moderate alcohol degree. Once the bunches are de-stemmed we let the berries macerate, leaving the must in contact with the skins for 3 to 4 hours. The rosé must is then fermented at 15°-17°C. The three different varietals are blended and the wine is bottled along with the liqueur de tirage. The bottles are stored in our underground cellars (at a constant temperature of 17°C) where the second fermentation takes place, followed by a period of ageing in contact with the lees of the yeasts. AlI in alI, the wine is stored for a minimum of 9 months in the winery, after which it is decanted and disgorged. A dose of expedition liqueur is then added which determines the cavas residual sugar content. Finally, the bottle is capped with a cork and labelled.
