Vinification

Small parcels of superb fruit are picked on different days and from several blocks to allow for multiple blending options. Grapes are harvested in the cool of the night, then destemmed and pressed. Primary fermentation takes place on skins over 10-12 days in a combination of open and static fermenters.

Aged 13 months in French and American oak.
