Vinification
Cold juice stabulation for 15 days at 4°C and then temperatures are increased up to 16°C to start the fermentation. Neutral yeasts are added so the Haut Poitou terroir can be expressed in the wine. The fermentation is done in stainless steel tank.
Maturation
Lies contact for 3 months in stainless steel tank with stirring 3 times a week.
