Description
The 2017 vintage has a beautiful intense golden colour and reveals an expressive and gourmet nose. It has aromas of candied fruit and white flowers. Fresh and lively on the palate, it reveals flavours of fresh fruit, with notes of quince paste and acacia honey. This wine presents material and structure while the finish is characterized by a very pleasant tension. To be enjoyed very chilled as an aperitif or as a cocktail*, with sushi, scallops, salmon tartar and of course foie gras.

Viticulture
Sémillon: short pruning, fanning with 2 to 3 branches Sauvignon: mixed guyot pruning, with 7 to 8 buds per vine. Pruning : short for Sémillon and guyot for Sauvignon. Particular attention is given during pruning to good aeration and distribution of the future bunches. Working the land : through “silly plowing” and «plowing back», working between the rows through screefing or controlled natural grassing depending on the plots. Side shoot removal : particular attention is paid to side shoot removal to keep the vines well-aired and to promote good ventilation of the grapes to ensure correct botrytis development. Leaf stripping, which is of capital importance for Sauternes, allows good ventilation of the fruiting area and prevents too much moisture gathering around the clusters, which would favour the development of grey rot rather than noble rot.
Vinification
Winemaking, ageing, putting (which is done by an external provider) and packaging are done on the property, according to tradition.
