Viticulture

Cave de Lugny is certified in Sustainable Winegrowing which is based on 4 pillars; preserve the environment, guarantee quality from the wine to the glass, support the local heritage and offer a fair price to the consumer and the producer. For the treatments of the vine we respect the regulations and we have traceability.

Vinification

The grapes are hand harvested, in punched trays, then pressed in a pneumatic press. The alcoholic fermentation is carried out in temperature controlled stainless steel vats (constant temperature of 16 to 18°C). The malolactic fermentation is completed at 100%. The second alcoholic fermentation takes place once the wine is blended then bottled, according to Traditional Method, and maturation is carried out during 12 months in order to get an optimum fineness of bubbles. Bottles finally undergo the process of riddling with gyropalettes, disgorgement, and are topped up with liqueur expedition.

Maturation

Matured in the bottle for 12 months to achieve optimum finesse
