Description
Raspberry and almond flower on the nose, combine with a citrus, honey baked apple on the palate, deliciously complex from over 4 years on yeast lees. Delicious with smoked trout or smoked salmon canapés.
Made by director/winemaker Simon Day, second generation English winemaker with over 25 years’ experience making wine in England and abroad.
Planted in 2007 on Scott Henry trellis. Soil type: Sandy loam over Devonian Red Sandstone. Harvest: Yield 4-6 tonne per acre. Handpicked.
Lees aged for 4 years. Disgorged in small batches to retain freshness.
