Vinification
Reductive style, cold crush 8°C skin contact for 8 hours, pressing, settle for 2 days at 10°C. 10% Fermented and matured in 400L. 3rd Fill French oak barrels for 5 months 90% stainless steel fermentation at 11°C for 24 days. Lees contact for 5 months, tank bâttonage weekly.
