Vinification
Grapes were harvested in September and October by machine, allowing a perfect maturity. Grapes were then sorted before vatting. Traditional vinification and fermentation, pumping over according to the tasting profiles and temperature control. Maceration, then de-vatting. Malolactic fermentation following.
