Vinification
The musts are settled and then fermented at 18c with added yeasts. The malolactic fermentation is then done. the wine is then bottled in February or June with added sugar and yeast and a second alcoholic fermentation takes place in the bottle

In Stainless Steel and then about 2 years in bottle on the lees
