Description

Made from Pinot Noir with a dash each of Chardonnay and Pinot Meunier, this has fantastic depth of flavour. The first new Bollinger release for 30 years, this is truly stunning. It’s a seductive, toasty and fresh rosé showing flavours of summer berry fruits with a soft texture and a long finish. Great with cold seafood, including lobster.

Awards

Bollinger Rosé demonstrates unique blending and red-winemaking skills: a true alchemy and a very technical wine. Since Bollinger Rosé was created in 2008,
the Poirier Saint-Pierre and Montboeuf plots, in Verzenay, are worked in the same style as the Côte aux Enfants plot to complete the production. A small amount (between 5 and 6%) of Pinot Noir is vinified as red wine, helping to add a powerful element to the finished wine.

At Champagne Bollinger the commitment to environmentally-friendly, sustainable viticulture has intensified over the years and is reflected through various actions throughout the growing and production process. • 1st House to obtain ‘High Environmental Value’ (HVE) Certification. In 2012 the Bollinger vineyard gained “High Environmental Value” status, becoming the 1st Champagne House to achieve this recognition, other Houses have since followed Bollinger’s lead. • 1st House to obtain ‘Sustainable Viticulture in Champagne’ Certification. The Comité Champagne (CIVC) launched a sustainable viticulture technical frame of reference in 2014, adapted to the specific nature of the Champagne Appellation d’Origine Contrôlée. This certification is primarily based on voluntary commitments regarding winegrowing practices of Champagne growers and Houses including vine training, phytosanitary protection, the use of fertilizers, soil maintenance, waste management, landscape preservation and biodiversity, once again other Houses have since followed Bollinger’s lead. o 100% herbicide free since 2015. Vinification

After primary fermentation in both small stainless steel or wooden casks the wine is bottled in the spring and taken down to rest in the pervading silence of the chalk cellars; Bollinger Rosé champagne will remain there for at least three years. It is this long period of rest that develops the extraordinarily delicate aromas of the wine and gives the bubbles their smooth texture. Each year, some of the very best wines are added to the House’s exceptional collection of 750,000 reserve magnums which are kept for blending into Bollinger Rosé. Stoppered with natural corks during a light secondary fermentation, these magnums enable each wine, from every cru and every plot, to reveal the infinite subtlety of their bouquet and to develop their full complexity while being protected from oxidation. This is a luxury that gives Bollinger the opportunity of letting wines mature over many years before being used. The art of using reserve wines has reached absolute perfection!

• Awarded ‘Enterprise du patrimoine Vivant’. In 2012 the Entreprise du Patrimoine Vivant (Living Heritage Company) label was awarded to Champagne Bollinger, recognition that distinguishes French companies showing excellence in traditional and industrial methods. As Bollinger are present in over 100 countries around the world, Champagne Bollinger thus exports part of the French economic and cultural identity. A key component of this is the use of Reserve Wines in Magnums and wooden Barrels: o Reserve Wines in Magnums add to the complexity and regularity over time of the multi-vintage blends. Under natural corks with a light secondary fermentation to protect them from oxidation and improve the complexity by the autolysis of the yeasts during ageing. A stock of more than 750,000 magnums aged for 5 to 15 years or more in the cellars.
