Description
Light gold in colour, with a delicate mousse. The nose unveils expressive notes of citrus, florals and white fruits. Well balanced with a delicate complexity, Chardonnay adds a lively, fresh fruitiness on the palate, whilst Pinot Noir gives the wine richness and length.

Ayala is an HVE (High Environmental Value) producer and has a "zero herbicide" policy, effective 2021.
Vinification
Ayala works with a beautiful palate of aromas from 70 crus in the Champagne region, particularly Chardonnay from the Cotes des Blancs. The wines are micro-vinified separately in 120 stainless steel vats to maintain purity and freshness. The winery is gravity fed and the winemaking team do everything possible to minimise human intervention.
Maturation
Brut Majeur is aged for three years on the lees, exclusively in stainles steel. Some wines spend a few months n stainless steel eggs.
