Vinification
The grapes are selected according to the vigour of the vine and the quality of the clays. Harvest by hand and gently destemming, paying attention not to break the grape skin. With the new Derenoncourt consultancy, prefermenting maceration takes place for about 24 hours, followed by an alcoholic fermentation in stainless fermenters with internal paddles of about 28 days (instead of 15 days before Derenoncourt management) with a temperature not exceeding 28°C (instead of 25°). At the end of the malolactic fermentation, the wine is transferred into French oak barriques 225 lt, 35% new and 65% of 2nd fill, for about 12 months. After 4 months in steel tanks, the wine is bottled. Fining in the bottle for at least 12 months before being presented in the market.
