Vinification
Hand harvested on 13 February 2020. Destemmed to a stainless steel tank. Natural fermentation, with pressing at 5 balling (total time on skins 3 days). Uninoculated malolatic fermentation. No additions of acidity. Unoaked. The intention was to seek the fine tension and clarity of young vine-fruit, while exploring the specific imprint organic viticulture would have on expression.
